Lettuce Overload

What do I do with all this lettuce, guys? I threw all the other vegetables into a delicious soup, but I have no idea what to do with all this lettuce.

Just sign me,

Not a big fan of salads

OK - here's a couple ideas, not knowing what kind:

- make lettuce cups - you can find a zillion recipes (search Chinese recipes)

- make thai spring rolls with vermicelli and veggies with lettuce as the wrapper

- try this kind of recipe with shredded/julienned lettuce. It's similar to "curtido" - all your friends will think "wow"

I throw extra lettuce into stir-fries. At first it seemed like a weird thing to do, but it tastes great!

I make green smoothies with my extra greens. You throw in the greens, some liquid (I just use water but you can use juice for extra sweetness), some yogurt if you want for creaminess and fruit (I use strawberries, bananas and some mangos) and blend away. They're really good and sooo good for you.

Jenn, I have no idea what kind of lettuce. You know, it's green, it's leafy. That's all I got for ya. Sigh. I am clearly going to have to start taking pictures of my veg delivery so y'all can identify it for me. That said, I was thinking perhaps lettuce cups.

Though stir fry works well with my inherent laziness, so thanks for that tip, Heather!


Jess ... I bet lettuce smoothies taste fine, but don't they look weird? Anyway, I am currently blender-less, but I appreciate the tip!! It probably is a great way to get rid of excess vegetables and super healthy!! :)

I have to say the lettuce wraps sound good too. Just toss in some rice and veggies. Mmmm!

Slice thinly and throw it into a pasta salad... either the kind with mayo or oil and vinegar will be good.

I'm with you, Ruchi. The summers we've done a CSA I've received so much lettuce I've been swimming in the stuff! The stir fry idea sounds promising.

I was also contemplating making lettuce chips ... basically drizzling olive oil over lettuce, and baking for 10 minutes. I might try that tonight. If it works out, I'll let all y'all know!!

You could invite some of your poor, nutrition-starved, grad-school friends over for a salad party.

That's what we do in early spring, greens season - mandatory salad for everyone who comes through the door.

The british grocery stores have such good cheese, a salad with fruit, cheese & nuts would be really good.

My favorite way to eat lettuce is on a tostada... it kind of sounds like a salad, but I don't like salads and I like this:

Grill or broil a tortilla or flat bread until crispy. Top with 1/2 cup of seasoned black beans (heated, cumin and chili powder for seasoning). Add cheese and broil if you eat cheese. Top with a few handfuls of lettuce and a handful of chopped tomatoes. Top with a BIG splat of guacomole. Eat!

Also, there was a restaurant who added lettuce to a pasta salad and it was GREAT. About 1/2 pasta and 1/2 lettuce with olives, tomatoes, feta cheese, onions, and a vinigrette of some sort.

Green smoothies do look a little weird but if you can get past that (and have a blender), they're great. People tend to be really skeptical or make fun of me until they try one and then they generally at least admit they're pretty good. I've even got a few people to make them on their own sometimes.

I just had to say that I tried the green smoothie (cause I grow my own lettuce and it's been a cool year so that's mostly what we have around here) and it was AMAZING!!!!!!!!! Thank you so much for the recipe, I am going to drink this every day for the rest of my life!!!! (to tell the truth the recipe almost made me want to throw up when i read it but it's so FABULOUS and about fifteen minutes after drinking it i was BUZZING!!!!) try it try it try it!!!!!!
