What Did I Get Myself Into?!!!

I agreed to make a turkey for our expat Thanksgiving next Saturday. I, who does not understand what the words brush cut mean. I, who has a horror of raw meat. I, who can screw up the simplest dish on the planet.

Yeah.

So if you need to find me next Saturday, I'll be in the kitchen, breathing into a paper bag, hysterically dialing ScienceMama for the 3,000th time.

I remember this panic-y feeling form the first time i roasted a turkey. At least you don't have to serve a critical mother-in-law for dinner!

Ruchi, if you want, I can forward you the shopping list & recipes for traditional Thanksgiving that Flylady sent out last week.

Just remember to check the size of the oven you have available - the first time I made Thanksgiving dinner, the turkey roasting pan wouldn't fit into my apartment oven.

Don't stress... Everything will be fine. I make small turkies a lot so we have lunchmeat for the week. It's really not that bad. It's all about the temperature you cook it to, so if you don't have a meat thermometor, you need to get one. My MIL is an awesome cook, and she recommends spreading softened butter and herbs under the skin of the breast. I've done that with chickens and it's really good, moist and tender. Just be sure not to overcook it.
Watch some cooking on TV, that always calms me down because then I know how to do it. I'm sure the food network website has tons of info and videos.

You can do it!

And I bet we'll get a funny story to boot! :)

Two words: Backup Plan.

Have Pizza Hut on speed dial, just in case.

I swear by St Delia (Smith)for most things Christmassy (which could be stretched to include Thanksgiving turkey)!

I love to cook and even *I* wouldn't offer to do this!

Scream, panic and RUUUUUN!

Seriously, people will appreciate the effort, brilliant or burnt.
good luck

All I can add is this: Remember if you're starting with a frozen turkey, you will need some lead time for it to thaw, like 2-3 days

You're a much braver person than I. I second the backup plan, such as an already prepared turkey dinner.

Joyce, you are right! I'm thankful for that!!

Rosa, that would be cool if you could. Thanks!! My email is arduousblog (at) gmail (dot) com.

Thanks Heather!!

Abbie, yes, I'm trying to take deep breaths. Thanks for the comforting words. :)

EGF, yes, you will. I can either do it, or you will get a HI-larious story. Or maybe both. :)

Burbs, heh, I think we're going to have SO much food, that probably a back up plan won't be necessary.

Just Gai, ok I'm not British enough yet. What is St Delia Smith?

Mon, now why didn't I consider running...?

Lucky, thanks for the tip. I wouldn't even have known that. Oh my god, oh my god, oh my god.

Heh. Thanks Beany.

It's going to be great, Ru. Don't worry. It's easier than you think.

Good luck!

Delia Smith is the British equivalent of Martha Stewart, without all the craft stuff. You'll find lots of her books in the cookery section of your local book shop / library.

Thanks for the clarification Cath@VWXYNot. Delia also has her own website at http://www.deliaonline.com/.
I've got an American friend coming round for dinner on Thursday. I'm not going to attempt the whole Thanksgiving dinner but I'm hoping to offer a hommage involving turkey and pumpkin.
