I agreed to make a turkey for our expat Thanksgiving next Saturday. I, who does not understand what the words brush cut mean. I, who has a horror of raw meat. I, who can screw up the simplest dish on the planet.
Yeah.
So if you need to find me next Saturday, I'll be in the kitchen, breathing into a paper bag, hysterically dialing ScienceMama for the 3,000th time.

I remember this panic-y feeling form the first time i roasted a turkey. At least you don't have to serve a critical mother-in-law for dinner!
Ruchi, if you want, I can forward you the shopping list & recipes for traditional Thanksgiving that Flylady sent out last week.
Just remember to check the size of the oven you have available - the first time I made Thanksgiving dinner, the turkey roasting pan wouldn't fit into my apartment oven.

Don't stress... Everything will be fine. I make small turkies a lot so we have lunchmeat for the week. It's really not that bad. It's all about the temperature you cook it to, so if you don't have a meat thermometor, you need to get one. My MIL is an awesome cook, and she recommends spreading softened butter and herbs under the skin of the breast. I've done that with chickens and it's really good, moist and tender. Just be sure not to overcook it.
Watch some cooking on TV, that always calms me down because then I know how to do it. I'm sure the food network website has tons of info and videos.

And I bet we'll get a funny story to boot! :)

I swear by St Delia (Smith)for most things Christmassy (which could be stretched to include Thanksgiving turkey)!

All I can add is this: Remember if you're starting with a frozen turkey, you will need some lead time for it to thaw, like 2-3 days
